Description
Cremisan Messa White is a medium-sweet white wine made from a blend of Chardonnay, Dabouki and Riesling, cultivated in the Beit Shemesh and Hebron area. The grapes are carefully handpicked, softly pressed and fermented in stainless-steel tanks at controlled temperatures. The dry wine is then aged on its lees for 4–6 months before being blended with Dibes concentrated must made from Dabouki juice. It is cooled and filtered before bottling. The result is a pleasantly sweet wine with balanced acidity, offering expressive flavors of baked apple, spun sugar, dried figs and lemon.
The Story
Messa White brings together international and indigenous Palestinian grape varieties, combining Chardonnay and Riesling with the local Dabouki grape. Its character comes from Cremisan's careful winemaking process—from hand harvesting in the early hours or at night, to gentle pressing and months of lees aging in stainless steel. The addition of Dabouki-based concentrated must gives the wine its distinctive sweetness, creating a smooth and approachable expression of Cremisan's winemaking tradition.
